Fruits & Nuts Mango Cake with Homemade Yellow Cake mix

Its been a while i posted fruits loaded cake, especially with mango. Since i want to finish some leftover mango pulp, i baked this beautiful cake with loads of fruits and nuts. Actually am running this week's blogging marathon with an interesting theme 'Readymade Produce - make at home'. Earlier, actually before blogging, i will always go for store bought cake mix, as they were quite easy to whisk and bake the cake. Then later, once i came to know more about baking cakes at home, i have completely dropped buying those ready-made products even though they are easily available.. Its always good to make cake mix at home by ourselves rite, we know what we have put in our cake batter, hence we can feed our family easily with our own bakes.

Caramel Kulfi

Kulfi, this Indian frozen dessert is well known for its particular shape, they goes for a specific moulds which is quite easily available in India. If you live in abroad and you have completely forgotten to get your kulfi moulds, i have an easy breezy substitution for those popular moulds. Just get a popsicles mould from your nearby supermarket and make your favourite frozen dessert with those simple moulds. Eventhough i have kulfi moulds at home, i like to make kulfis in popsicle mould as they are quite easy for the kids to carry and enjoy thoroughly without much efforts. My today's recipe goes for a different kulfi, actually i want to name it as Fusion kulfi, as this kulfi goes for caramel sauce. I used homemade caramel sauce, which can be made easily with sugar and butter. But still if you dont know or dont want to make your homemade sauce just stick with the store bought ones.

Eggless Mango, Chocolate Chip Mug Cake

If you have a sudden craving or dont have oven at home, am sure your microwave oven will help definitely to satisfy your tastebuds. I have been cooking loads of dishes through microwave oven which gets cook easily with less efforts and sometimes even in less time. Especially mug cakes, they take hardly 2-3minutes depending upon the quantity of the cake batter you have poured in your mug. If you want to make a small size individual cake with less ingredients, microwave cooking will definitely helps you a lot. But i recommand to get silicon moulds if you want to make small sized cakes either for a sudden craving or else for an individual cake. However this gadget will definitely helps you a lot if you are planning not to spend much time in your kitchen especially during summer days..Sending to Srivalli's Anniversary Mela.
